8 oz low-fat cheddar
24 oz ground beef (97% or leaner)
1 packet taco seasoning
2 large eggs, whites only
1 cup chopped scallions
Preheat oven to 425 degrees. Cut cheddar into 8 (1oz) sticks. Then cut 1 oz sticks into 3 cubes. You should have 24 cheddar cubes when complete. Mix meat, taco seasoning, egg whites and scallions until well combined. Form 24 (1 oz) meatballs. Press cheese into the middle of each meatball. Bake 15 minutes or until done.
Makes 24 meatballs. Serving size 3 meatballs. 160 protein calories per serving.
