20 oz cooked rotisserie chicken breast, shredded

2 green bell peppers, diced

32 oz fat free chicken broth

2 (4 oz) cans diced green chilies

1 (16 oz) jar salsa verde

1 onion, diced

1 tsp minced garlic

1 tbsp olive oil

1 tbsp corn starch


Sauté the green peppers, onion, and garlic in olive oil until tender. Add broth, salsa verde, corn starch and green chiles.   Simmer for 15-20 minutes. Add chicken breast and heat through.  Makes approximately twelve 1-cup servings. Serve over cauliflower rice, salad, scrambled eggs, or egg muffins.
