4 – 4 oz. salmon filets, thawed
2-3 tsp Kikkoman Soy Sauce (no carbs)
1 tsp hot chili oil
1 tsp sesame oil
½ tsp ground ginger
Salt and Pepper, to taste
½ cup Blue Diamond® Wasabi & Soy Sauce almonds, ground

Preheat oven to 425°.  Line a shallow baking dish with foil and place the salmon filets skin side down.  Crush or finely chop the almonds.  (A food processor works well.)  In a small bowl, mix the crushed almonds with a teaspoon of chili oil and a teaspoon of sesame oil.  Drizzle the salmon filets in soy sauce, then sprinkle with ground ginger and salt and pepper, to taste.  Evenly pat about 2 tablespoons of the almond mixture onto the salmon filets.  Bake for 12-15 minutes or until salmon flakes easily with a fork and the topping is browned.  Makes 4 servings.
